Ingredients

  • 4 Farmer's Promise Russet potatoes, scrubbed
  • 2 tbsp. butter, melted
  • 2 tsp. coarse salt
  • 8 slices Co-Jack cheese, each cut into 9 squares
  • 2 slices cooked crumbled bacon
  • 2 tsp. fresh minced chives

Instructions

  • Preheat oven to 450-degrees.
  • Place a wooden spoon on each long side of a potato. Cut 1/8-inch slices without cutting all the way through the potato.
  • Place on a baking sheet, brush with butter and sprinkle with salt. Bake for 50-55 minutes or until tender. Carefully insert a cheese square in between each slice; sprinkle with bacon and chives. Bake an additional 5minutes or until cheese is melted.

Recipe Tips

Placing 2 wooden spoons on each side of the potato prevents cutting all the way through the potato.
The Russet potato skin has more nutrients than the interior of the potato. It is loaded with fiber, about half the potatoes fiber is from the skin.
